Yesterday morning by 10:30 the little ones were in the tub playing. Contained playing. It's a beautiful thing!

I love seeing that gold band on that strong hand cupping our tiny baby girl. Sweet and so attractive. Makes me thankful.

Make that blue caramel popcorn. (It's supposed to be blue...kinda turned out greenish.) I know, maybe not so appetizing, but when MW spotted the food coloring in the spice cabinet, she begged, and I obliged. (Katie and A and Mom - does this remind you of anything?) As a child, every time we made Rice Krispy Treats, my Dad would inhale the entire batch. Leaving NONE for us. However, if we died them blue or green, he wouldn't touch them. We made a lot of green Rice Krispy Treats.
Caramel Popcorn- Betsy C.
6-8 quarts popcorn popped (I bought plain kernels and popped 'em in oil on the stove top)
2 c brown sugar
1 c margarine (I used butter)
1 t salt
½ c white Karo syrup
1 t vanilla
½ t baking soda
Preheat oven to 250 degrees. Place popcorn in large, buttered bowl. Boil sugar, margarine, salt, Karo, and vanilla for 5 minutes. Remove from heat and add baking soda. Pour over popcorn and mix well. Place on cookie sheet. Bake 250 for one hour, stirring after 30 minutes. Remove. While warm place on waxed paper til cool, Store rightly covered.
In case you can't tell, they're painting "wolf claws" on their hands.
This is why I have VERY FEW pictures of my precious MW's face. I have begged and pleaded, to no avail.
I leave you with a photo of "peanut butter bars." Yesterday's left over oatmeal yielded me two 9x13s of these. This was a first time recipe for me. Unfortunately, I now know that I am the only one in my family who will eat them. Did you catch that? TWO 9x13s. That is a lot of peanut butter bars.
In other news, being the glamorous and talented chef that I am, I made pumpkin biscotti. Isn't that sophisticated? Unfortunately, no amount of soaking in coffee yields 'em bite-able. First I under-cooked them, then to compensate I over-cooked them. I am not a fan of throwing food away, however, I don't think in their current concrete state they exactly qualify as food. I plan to try my hand at these babies again.

I hate it when I make something only I will eat. Hmmm, I think you need to share peanut butter bars with the neighbors!
Y'all do the most fun things!! I hope ML and I (and anyone else that may come along) are able to do lots of cooking/crafting/playing together! If I lived in your house, I would definitely be about 800 pounds...I think y'all make all my favorites (which doesn't cut many things from the menu)!

ReplyDeleteMy sister had to have green (or blue or red) scrambled eggs for a snack in the afternoons...she made them in the microwave (gag!!)!
Hey try crushing the pumpkin biscotti into crumbs and use it for a pie crust! It might require a hammer, but it might be worth a try! Maybe add a little butter to make it work as a crust.

ReplyDeleteJ ~ Your children are all gorgeous! I love the picture of chief wannasuckmythumb...what a terrific name! :) Those EYES...on baby are stunning! Not a huge fan of blue popcorn, but the recipe does sound delish! Your peanut butter bars...are they the ones from the breakfast challenge?? You can freeze them...I've done it...a bit too much to eat all at once. I also found that they were better with a little less liquids...more firm. :)

Hi J! As promised...the details on the PB bars. :)
ReplyDeleteFirst of all, I would use a cookie sheet/jelly roll pan...and make them thinner.
AND they need a longer baking time...I found 30 minutes was about right.
Try the following measurements:
2 cups leftover oatmeal
6 Tbsp Butter (melted)
3/4 cup sucanat or brown sugar
1 cup Whole Wheat flour (or...whatever type you want)
1/3 cup Peanut Butter (I use the real stuff...not preblended...the kind with oil on the top)
1 egg
1 tsp vanilla
Hope it works for you. I like them broken into a bowl when they are still hot and milk over top. They are good cooled and they freeze well...like a "power bar"...who knows, maybe you'll like them better the second time around.
I really like the baked oatmeal and granola from the challenge...have you tried that yet?
