A Little Slice of Goodness...





Before launching into what the good doc said, as well as the exciting events of our afternoon, I wanted to share this recipe.

Several weeks ago I made an apple pie that was the best I've ever put in my mouth...it was like sweet apple goodness with gooey caramel drizzled and baked all over the top...I highly recommend it! Wow your fam with it!


Harvest Apple Pie (that is "oh so good!")
  • Pastry Crusts (2)
  • 5 large apples (I used granny smith)
  • 1 T cornstarch
  • 1/2 t salt
  • 3 T butter, melted
  • 1 t ground cinnamon
  • 3 T sugar
  • 1/3 c light corn syrup
  • 1/2 c brown sugar
  • 3 T light corn syrup
  • 1/4 c chopped pecans
  • 2 T flour
  • 2 T butter, softened

Fill pastry lined pie pan (9”) with apples.
Combine next 6 ingredients and pour over apples
Cover with top curst and bake at 425ยบ for 30-45min
Combine remaining ingredients and spread over crust
Return to oven for 10 min. or until topping is bubbly (and put something under the pie pan to catch the run-off…I made a HUGE mess!)

A word from the doc: it's pink eye for the little man (in both eyes now!) and a good old cold for MW. Thank You, Lord, that it isn't the flu! (Literally - we are thanking God!)

Having them both home has been fun...until this afternoon. We lunched outside and prior to rest time I had both kids picking up toys when MW skinned her knee. It's really not too bad, but from the screams and moaning you'd have thought she was dying. The neighbors don't come out to check the commotion anymore. Two words: Drama Queen. (BTW: I know a skinned knee hurts...I've had my share...I don't mean to sound unsympathetic. It's just that at some point you have to stop carrying on about it.)

So I carried her inside, every step feeling like the weight of her body was going to push baby right on out...and I plopped her on the bathroom counter. The little man followed on my heels and was screaming, too...so I had two completely hysterical children! I put him on the counter, too. MW screamed harder when I broke out the peroxide...I told her a little sting now or we might have to go to the hospital in a few days and they'd have to give her a shot in her leg and cut out the infected areas. She reluctantly agreed to the peroxide. 

Little man was insanely jealous. So...I put the lid on the peroxide, screwing it tight, and handed it to him...I turned my head long enough to turn on the water and in that short amount of time he'd unscrewed the cap to the 32 oz bottle and poured it out all over himself and the counter. 

So MW is still sobbing, feet in the sink...there's peroxide running everywhere. Little man thinks he's in fun land...so I put him in the sink, stripped him to his diaper and got him all rinsed off...much dirt from playing outside...(same dirt that left footprints all over my counter top and is now mixed in with the peroxide, which is running down the cabinet...) and put him on the floor. I proceed to rinse off MW's legs and feet and to try (in vain) to soak up some of the 32 oz of peroxide. All the while, little man is splashing in the toilet. Yes. Hands in the toilet. He hasn't done that in months. 

Finally I got them both cleaned up. MW was still screaming...a dull scream, but it would definitely classify as a good, hard cry...and then the magic happened. I put neosporin on her skinned knee and she immediately stopped crying and said it felt totally fine. Hmmm....

So I got them both down for naps/rest. I got the bathroom cleaned up, too. And then finished picking up outside. And I just had to smile and tell myself, "it's okay." The hysterics are over and hopefully I have an hour or two to re-gather my sanity. Funny how an episode like that can make me feel like I'm losing it!

  1. Brings a smile to my face. I think that is why all of my kids still take a nap. I need those hours to gather my thoughts and take a deep breath!!! :) Hope you have a fabulous weekend.
